Take a (3lb) pork rib slab, rub it with coarse salt, ground ginger, and
crushed peppercorns, put it in a baking pan, cover with foil and place
it in the oven, heated to 350F for an hour and half.
Meanwhile, put in a small saucepan -
- chopped prunes (8-10), chopped dried apricots (5-6),
- 2 tbsp worchestershire sauce, 4 tbsp rice vinegar, 4 tbsp soy sauce,
- 3 tbsp honey,
- 1 cup of white wine,
- minced garlic clove and 1/2 of onion, chopped and sauteed,
- a dash of ground cayenne pepper.
Peel 3-4lb of white potatoes, cut in halves and boil for 15 minutes.
When 1 1/2 hr passed, discard foil, remove pork from pan, put potatoes in, put pork over potatoes and baste with 1/3 of sauce. Put back in the oven for 10 minutes. Then turn pork over, baste with another 1/3, put back for another 10 min. Repeat it once again. Serve.
